Tomato and Basil Pizza

Lately, hubby and I have eaten so many tomato sandwiches that we needed something different. We finally decided on tomato and basil pizza. A pizzeria near our last home made an amazing thin crust tomato and basil pizza. Our goal was to recreate a version of this pizza.

At the beginning of the summer, we not only planted Cherokee Purple tomatoes; we also planted two basil plants. Prior to moving, I had always used store bought herbs and spices. When I added the basil to the garden, it was mainly to prevent pests. Now, the basil plants are huge, smell lovely and in combination with the tomatoes, is what gave us the idea for tomato and basil pizza.

As much as I would like to include a recipe, hubby just put this together on his own. I’ll admit that food is a large part of our lives (another reason for the homesteading) and we both love to cook so this technique happens often. Our ingredients were as follows:

  • Frozen Pizza dough
  • Cornmeal
  • Olive Oil
  • Italian Seasoning
  • Shredded mozzarella
  • Ricotta
  • Fresh Basil
  • Tomatoes

Rick flattened the dough out on a dusting of cornmeal and brushed it with olive oil before sprinkling with the Italian seasoning. After that, he covered it with mozzarella and put on the basil and tomatoes. The last step was to put spoonfuls of ricotta in strategic places. Into the oven it went. Out came the deliciousness you see in the photos. Simple, inexpensive and so delicious.
